I am a true oatmeal cookie monster... I just counted, and as of January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you tried any of these yet? (? They are some of the most well-known recipes on my website cause they taste really sweet and comfy, just like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!
So you're going to begin with whole wheat germ (or fermented, if you want ) and immediate oats (like those... or these for a gluten-free edition!) . Immediate oats are thinner and smaller than conventional rolled oats, and you are able to see them in canisters right next to those classic oats in the grocery shop.
I probably sound like a broken record by now... But cause I ? you and also want your cookies to turn out perfectly plump and soft, I'm reminding you ... Measure your flour and oats properly, with this method or a kitchen scale! (? That is the one I have and love. It reference just cost $20!) Too much of either ingredient is likely to make your cookies taste cakey or dry, rather than chewy. This is particularly true of the oats--that they behave like little sponges and soak up lots of moisture out of the cookie dough!

Watch those bananas? And all those brown stains? When it comes to baking bananas, brown = beautiful! I ? additional speckly bananas because they have a lot bright, bold flavor--and extra natural sweetness! That's the minimum amount of brown that I suggest. More is better!

You want the type that comes straight from pine trees, which is generally sold in thin glass bottles or squat, round plastic jugs. Skip the pancake sugar and sugar-free syrup!

Should you let the peppers sit while mixing together the cookie dough, this small trick hydrates them they're exceptionally succulent --and that makes a huge difference in these cookies once they're baked!

These oatmeal biscuits are soft, chewy, and full of banana flavor! The familiar cozy spices and plump raisins make these even more irresistible. They'll keep for at least one week if kept in an airtight container in the refrigerator--if they last long!
1 cup (100g) instant oats (fermented if required and measured like this)
3/4 cup (90g) whole wheat or gluten-free* flour (measured like this)
1 1/2 teaspoon baking powder
1/4 tsp salt
1/4 cup (63g) mashed banana
1 teaspoon vanilla extract
In a medium bowl, whisk together the oats, flour, baking powder, cinnamon, and salt. In another bowlwhisk together the butter or coconut oil, mashed banana, and vanilla. Add the flour mixture, stirring only until incorporated.
With a spoon and spatula, dip the cookie dough into 15 rounded scoops onto the sheet, and flatten to the desired depth and width using Vegan Chocolate Chip Cookies Recipe by Tasty a spatula. Bake in 325°F for 10-12 minutes.
Notes: It is extremely important to measure both the wheat and oats correctly utilizing this method or even a kitchen scale. (? That is the one I have and love!) Too much of either can dry out the cookies and leave them cakey rather than chewy.
Immediate oats are also referred to as quick-cooking or moment oats. They are available in large canisters, just like old-fashioned oats. They are not those in the small flavored loaf of bread. To create your own, include the same number of traditional oats to a food processor, and pulse 10-12 times or until the oats will be about 1/4 to ? of their original size.
For the gluten-free flour, I suggest the following blend: 1/2 cup (60g) millet flour, two tablespoons (15g) tapioca flour, two tablespoons (15g) brown rice flour, as well as 1/2 tsp xanthan gum. Most store-bought fermented flour blends (such as that one!) Will also work, if measured like this.
